When you press down, this three-layer system traps grounds at the bottom while clean coffee rises above. If your press feels hard to push, you might be using grounds that are too fine or you've assembled the filter plates in the wrong order. The spiral plate goes on top, flat plate on bottom. Coarse grounds work best because they won't clog the mesh. You'll want one tablespoon of coffee per four ounces of water for balanced strength. Steep for exactly four minutes, then press slowly and steadily.
